Cumquat brandy

Here's something I'm enjoying at the moment.

1 bottle brandy (I used St Agnes)
500g sugar
500g Cumquats

dissolve the sugar in the brandy
prick the cumquats all over to allow the juices to flow
add the cumquats to the brandy mix and allow to sit for 3 months (! patience grasshopper)

I was a little impatient and sampled mine early, but now that 3 months is up I'm enjoying it
You can eat the fruit if you're that way inclined, but they were a bit bitter for me.
Really nice to sip and savour the marmalady flavour.

I think the next batch will use less sugar and less cumquats. This lot is a bit too syrupy, and a little too tart.

mmm nothing like a bit of tart i always say reaps....mmm lol

yeah it appears that there is sooo much room when making your own to set the taste for oneself.. shame it takes sooo long to make though.

Ok Reaps, I have got about 4 kg of cumquarts freshly picked from the tree and I would like to know how much less sugar and fruit you would add to your brandy so it is not so syrupy.

Well.... I dunno. With the amount of cumquats you have, you have the opportunity to experiment.

Do one batch with the full amount, another with slightly less, and so on.
Whyou can see which suits you best. I guess you really can add more sugar at any point in time...
It's not excessively sweet, everyone I've given it to has liked it. You might too.
